GRILLED OR BROILED ZUCCHINI

 

4 small Zucchini                                                       

4 Tbsp. Butter

1/2 tsp. Lemon-pepper seasoning                        

Dash of Garlic salt

2 Tbsp. Parmesan cheese

 Wash, dry and halve lengthwise the zucchini and arrange in a single layer on a greased broiler pan or hinged grill. Score zucchini diagonally. Melt butter and add lemon-pepper seasoning and garlic salt. Brush on cut side of zucchini. Sprinkle with cheese. Broil 8 minutes or grill until tender and cheese browns. No need to turn.

~Zucchini should be stored in a plastic bag, with no moisture for up to 4 days or so.  To prepare first scrub zucchini gently with a soft brush under running water.  Slice off both ends.  No need to peel the edible skin.  Zucchinis can be baked, boiled, grilled or stir-fried.  For those of you that have picky eaters try hiding it in your pizza.  Simply shred the zucchini (peel if your trying to hide it) and mix it with the cheese and then put your other toppings over cheese and zucchini.
